Christmas is already sneaking upon us again, and nothing screams Christmas festivities louder than cookies. No Christmas table is complete without a batch of cookies to serve to family and friends visiting.

While you can always bake the classic chocolate chip cookie, these recipes take it a step further. With all the flavors and decorations on these small bundles of joy, your Christmas will surely be one to remember.

Besides that, here reasons you should be enjoying them.

Many assume that following a diet means strict measures, meaning no desserts either. It is ok to enjoy a dessert occasionally. Depriving yourself isn't any way to live. The trick is to keep yourself balanced, not completely cut them out of your diet, but not to eat them weekly either. Having cookies or a dessert occasionally is the perfect way to enjoy life. 

  • Ideal for On-the-Go Snack- 

Imagine you are in the mood for something sweet. You can't pack a slice of cake or ice cream to go with you on your errands. But you can store a couple of cookies in a plastic bag and munch on them while you run errands.

  • Endless Varieties-

Cookies are one of the dessert options that have a tremendous range of variety. You'll never have to repeat the same old recipes if you're one who's adventurous with dessert recipes.

You can bake them in all flavors and shapes (provided you have cookie cutters). Cookies are the solution to repetitive boredom. And, of course, almost all cookies go exceptionally with a glass of milk. 

Gluten-Free Stained-Glass Cookies

This recipe is as easy as the cookies are delicious. You can easily bake them with your kids, and they'll certainly enjoy the process. The hardest bit might be keeping yourself from devouring them just after they're ready.

You can even hang these tender cookies from the Christmas tree as ornaments. Your loved ones will love the gift boxes you send out if with a shining star in them. 

Total Time- 35 minutes

Serving- 24 cookies 

Ingredients:

  • 3/4 Cup of butter
  • 1 cup of sugar
  • 2 large eggs
  • 3.5 cups all-purpose gluten-free, free flour blend
  • 1 teaspoon xanthan gum, omit if included in your flour blend
  • 1 teaspoon baking powder
  • ½ teaspoon vanilla extract
  • ½ teaspoon almond extract
  • 16-ounce bag of hard clear candies

Directions: 

  1. Take two cookie cutters of the same shape, one being smaller to make the cutout centers.
  2. Preheat the oven to 350°F.
  3. Put the hard candies in plastic bags. To make it easier, make sure each plastic bag has candies of the same color. Crush the candies into small pieces using a mallet, meat tenderizer, or a rolling pin. 
  4. Mix the sugar and butter with a whisker until smooth. 
  5. Mix the almond and vanilla extracts and eggs in the bowl until they're combined. 
  6. Add the dry ingredients into another bowl and mix. 
  7. Combine the dry ingredients with the egg and sugar mixture. Mixing well. 
  8. Put your dough in the refrigerator for a few minutes. Then place parchment paper on top and bottom of the dough and roll it out. 
  9. Take the large cookie cutter, cut out your cookies, place them on a lined baking sheet, and then cut out centers with a smaller cookie cutter. 
  10. Fill each center with the pieces of crushed candy. For each cookie, use ½ teaspoon of candy of the same color. 
  11. Bake at 350°F for 12-14 minutes. 
  12. Allow them to cool on the parchment-lined baking sheet to get firm cookies with hardened “glass” centers.
  13. The centers might bubble, but this is normal, and the bubbles will soon disappear once the cookies cool.
  14. Serve and enjoy!

Tips

  • It's best to buy a gluten-free flour blend that doesn't include xanthan gum in it for cookies. The reason for this is that too much it can cause the cookie dough to be sticky. With a flour blend without xanthan gum, you can add the required amount yourself. 
  • As with other gluten-free products, these cookies tend to dry out or get hard after some time. They do freeze well if needed.
  • If the cookie dough isn't hard enough to roll out, keep it in the refrigerator for a few more minutes. 
  • For dairy-free cookies, the only thing you've to do is substitute butter for dairy-free butter.

  • 1/3 cup ground flaxseed
  • ½ teaspoon baking soda
  • 2 tablespoons ground ginger
  • 1 teaspoon fresh ginger, grated
  • 1.5 teaspoons cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground cloves
  • ½ teaspoon vanilla extract
  • ¼ cup coconut oil, melted
  • ¼ cup honey
  • 1 egg, lightly beaten
  • 1 white chocolate bar

Instructions:

  1. In a large mixing bowl, combine baking soda, flaxseed, almond flour, nutmeg, cinnamon, fresh ginger, ground ginger, vanilla, and cloves. Mix them well.
  2. Add the honey, coconut oil, and egg to the dry ingredients, and mix well. 
  3. With the help of cling wrap, roll this mixture until you form a ball. Put the mixture in the freezer for half an hour. Then keep it in the fridge for another half an hour.
  4. Roll the dough out with the use of a rolling pin.

Tips

  • The dough is very soft when you're about to use the cookie-cutter, so be diligent and gentle. Cut the dough left on the edges of the cookie cutter. Next, place the cookies on a tray carefully with a spatula or knife. Line the tray with baking paper beforehand. 
  • Substitute the coconut oil with butter or almond milk for a more enhanced taste.
  • If you're allergic to nuts, the almond flour can be substituted with coconut flour, although this might slightly change the flavor.

  1. In a medium-sized bowl, add coconut flour, baking powder, almond flour, sugar, and salt. 
  2. In another medium-sized bowl, stir the almond extract, egg, and coconut oil.
  3. Preheat oven at 350°F.
  4. With the help of parchment paper, line your cookie sheet. 
  5. Make 1″ balls by rolling the dough and place them 2 inches apart on the cookie sheet.
  6. Make an indentation in each cookie about three-quarters of its way down. Reshape the edges to refine them.

Tips

  • Just after baking, the cookies are very soft. Instead of cooling them on a rack, let them cool on a baking sheet for a few minutes. Then you can move them onto the wire rack to let them cool down completely.
  • This recipe uses store-bought marshmallows for convenience. Although, you can make your marshmallows a day before and then use them in this recipe.
