O-M-Geeeee….. Where have I been? I recently learned about this craze called Chaffle's! Have you heard about them (or am I seriously the only one who hasn't?) Anyhow, they are beyond delicious. They not only work for my gluten-free dieters, but they are keto-friendly and low-carb too!
I am genuinely on a chaffle bandwagon these days. It is just myself and my husband in our household, so he always gets to taste my new inventions. Ok, I didn't “invent” the chaffle, but I sure darn wish I had. But whatever, I am glad I found them. You can make anywhere from breakfast to dessert and everything in between. I guarantee you will see more chaffle recipes as I continue to try them all!
Back when my husband I were dating, we would go into this little local restaurant. One of our favorites there was the Monte Cristo sandwich. They were so yummy. They had the perfect blend of ham, turkey, and cheese, on yes, a piece of bread dipped in egg. Now that I eat gluten-free, I never thought I would enjoy a sandwich again. Well, let me tell you, this chaffle recipe won me over.
I have tried and tweaked a few different chaffle recipes, but this seems to be our favorite and is super simple to make.
I know you can tell the excitement in my voice, so let's get started on this week's recipe.
What you need:
Mini waffle maker (this one by dash works perfect and comes in a variety of colors)
Ingredients:
- 1 Organic Chicken Egg
- 1/2 Cup of Shredded Mozzarella Cheese
- Thin Shaved Ham (gluten-free)
- Thin Shaved Turkey (gluten-free)
- 1 Slice of Provolone Cheese
- Raspberry Preserves (optional)
Directions:
- Heat your mini waffle maker (the light will come on when the griddle is hot.)
- Whisk your egg, add the 1/2 cup of mozzarella cheese and stir together.
- Place half of the mixture onto your mini waffle maker, making sure to spread the mixture onto the entire surface.
- Close the top and let cook for approximately 2 minutes until it is nice and golden brown.
- Remove chaffle and do the same thing with the last half of the mixture.
- Once both chaffles have cooked, add the ham, turkey, and cheese.
- Serve with raspberry preserves if desired.
