I miss some comfort foods that I used to eat. One of them being shepherd's pie. But, this recipe is super delicious. I have mentioned that my family doesn't eat gluten-free exclusively as I do, yet they all love this version of shepherd's pie.

Shepherd's pie originates from the early 1800s and is a traditional Irish recipe. Women had to be very creative with leftovers, and it is similar to the casserole dishes we make today.

I don't use the traditional meat from lamb; instead, you can use ground hamburger, turkey, or chicken. So the recipe isn't technically “shepherd's pie,” it would be considered “cottage pie.” But, we call it shepherd's pie. No matter what meat you use, it is authentic comfort food.
I am also about a recipe not being a time suck and, this one is super easy and quick. We are all busy, and I don't want to spend all my time in the kitchen preparing meals.

Like most recipes, you can add or delete different veggies or meat to make it suit your family, which I occasionally do. It might classify as “cupboard crap.” For those of you who don't know what is, it is our family's way of saying, use whatever you have in your cupboard.

You can even make this recipe vegan if you don't eat meat by merely swapping the beef for a mix of mushrooms and lentils.

Preparing your dish ahead of time is an option; simply place it in the refrigerator and add a few extra minutes in the oven when cooking. You can also freeze your leftovers for up to three months.

Recipe for Gluten-Free Sheperd's Pie:

Ingredients:

  • 1 pound ground beef, turkey or chicken
  • 1 large carrot – chopped
  • 1 small onion – chopped
  • 3 celery stalks – chopped
  • 3 sage leaves – chopped
  • 3 cloves garlic – minced
  • 3 sprigs of thyme without stems
  • 1 tsp. sea salt
  • 1 tsp. pepper
  • 3 tbsp. fat (ghee, coconut oil or olive oil)
  • 1 large cauliflower head – chopped

Instructions:

  • Preheat oven to 350°
  • Steam cauliflower for approximately 10 minutes
  • Heat 1 tbsp. of fat in a skillet and place onion in the pan.
  • Once the onion is translucent, add meat, salt, pepper, and garlic and cook for about 5 minutes.
  • Add celery and carrot and cook for another 5 minutes.
  • Continue cooking, adding sage, and thyme.
  • Place all the cooked ingredients into a glass casserole dish and set aside.
  • Take cooked cauliflower and put it into the blender or food processor with 1 tablespoon fat and blend until it resembles mashed potatoes. 
  • Spoon mashed cauliflower on top of the meat mixture and cook uncovered for approximately 30 minutes or until thoroughly heated.
