Gluten-Free Vegan Breakfast Burritos
Servings: 5 Servings
Ingredients
For Tofu
- 1 Package Tofu
- 1 Tbsp. Avocado Oil
- 1 Small Sweet Oniion Chopped
- 2 Garlic Cloves Chopped
- 1/2 Tsp. Cumin Powder
- 1/2 Tsp. Sea Salt
- 1/4 Tsp. Turmeric Powder
- 1/4 Tsp. Paprika
- 1/2 Tsp. Soy Sauce
Burrito
- 1/2 Tbsp. Avocado Oil
- 1/4 Tsp. Salt
- 1 Medium Avocado Sliced
- 1 Cup Spinach
- 1 Large Carrot Julienne Cut
- 6 Gluten-Free Tortillas
Instructions
- Dry & press the tofu as the package suggests.
- In a large skillet, heat avocado oil over low-medium heat.
- Saute onions for 2-3 minutes, then add garlic and saute for 2 minutes.
- Add tofu cubes, salt cumin, turmeric, paprika, and soy sauce.
- Cook for 2-3 minutes.
- Place the spinach, avocado, and cooked tofu into the tortilla wrap & roll it up.
- Grill your burrito in the pan to seal all the flavors in.
