These happen to not only be nutritious, but they are delicious too! If you are looking for a quick and easy meal for the weekend or weeknight, these are my go-to! I am a fan of black beans, but if you're not, you can eliminate them.

Guacamole Stuffed Sweet Potatoes
Servings: 2 Servings
Ingredients
- 2 Medium Sweet Potatoes
- 1/2 Can Black Beans
- 1/2 Cup Salsa
- 1/2 Cup Arugula Leaves
- 1/2 Tsp. Nigella Seeds
For the guacamole
- 1 Medium Ripe Avocado
- 1 Tsp. Lime Juice
- 1/2 Tsp. Garlic Powder
- 1 Small Tomato Diced
- 1/8 Cup Onion Diced
- 2 Tbsp. Cilantro Optional
- Salt & Pepper To Taste
Instructions
To Cook the Sweet Potatoes
- Preheat the oven at 400F
- Poke a few holes in each sweet potato and bake for 40-45 minutes until tender. Set aside and cool
To Prepare Guacamole
- Peel and de-seed the avocado.
- Mash the avocado in a bowl with a fork.
- Add lime juice, garlic powder, salt and pepper, onion, tomato, and cilantro, and mix well.
To Dress Your Potato
- Cut a slit down the middle of each sweet potato to open the potato. Use a fork to mash and fluff up the inside of the potato.
- Spoon the beans and salsa on top of the potato.
- Divide the guacamole evenly among the potatoes, and top with the arugula leaves and nigella seeds.
