Homemade Greek Salad Dressing

I love homemade dressings, and store-bought ones just don't compare, especially when you make a delicious one like this Greek dressing.

When I was a young girl, my parents owned a pizza place. It wasn't just any pizza place either. It was a Greek pizza restaurant, with to die for Caesar sub sandwiches, Greek salads, and of course, pizza.

It wasn't a chain restaurant or franchise. But, there was only one other restaurant that my parents replicated the menu from. I found out the story years later of how it came to be that they started the pizza place, to begin with.

As a young married couple, they enjoyed dining out on rare occasions. One of the places was a pizza place owned by a Greek man. When they decided to start up a restaurant, they went to him and asked if he would show them his recipes and let them use the restaurant's name?

They paid him a one-time payment that they had negotiated. But, he never gave them the actual recipes to his sauce or his dressing. He mixed all the ingredients, and my parents would purchase the ready-made sauce and dressing.

I can remember as a 10-year-old child helping prep the salads for the evening's customers. I would be in the back, cutting up the head of lettuce and throwing out a majority of the lettuce because I did not like the “white” part of the head of lettuce. When my mom caught me doing this, I was reprimanded and told it was wasteful. How was I to know that other people enjoyed eating the white, thick, disgusting part of the lettuce? My taste buds have changed, but if you ask my husband, he will tell you I still pick the thick white pieces out of my salads.

Now, as an adult, I am delighted when I make this quick and easy dressing recipe. It takes me back to my childhood and some wonderful memories. Even though it is not the exact recipe, it is the closest I have come up with.

This homemade Greek salad dressing is easy to make and has just the right tang. Drizzle it over lettuce with tomatoes, cucumbers, black olives, and feta cheese for a perfect side dish. My mouth is watering just thinking about it!

Homemade Greek Salad Dressing

Tasty and tangy dressing that will make any salad taste like heaven.

Ingredients

  • 1/2 Cup Extra Virgin olive oil
  • 3 Tbsp. Red Wine Vinegar
  • 1 Tbsp. Fresh Squeezed Lemon Juice
  • 1/2 Tsp. Dijon Mustard
  • 1 Large Garlic Clove
  • 1 Tsp. Dried Oregano
  • 1/2 Tsp. Salt
  • Fresh Ground Black Pepper To Taste

Instructions

  • Measure all ingredients into a shaker bottle.
  • Shake vigorously until blended.
  • You may also whisk ingredients together in a bowl.
  • Store leftovers in a sealed jar or shaker bottle in the refrigerator. Allow to come to room temperature and shake well before using.
