Vegan Beet Burger

If you are looking for a tasty dinner recipe, then you will enjoy this easy to make beet burger.

Since I started eating a plant-based diet in the last few months, I have loved all the delicious and satisfying recipes I have created. I do have to say this satisfies my craving for eating a burger with none of the guilt. And, I feel so much better not eating meat anymore. My husband (who is a meat-eating kind of guy,) loves these burgers, especially when we cook them on the grill.

I also have to admit that I love a perfectly shaped burger. This burger patty maker makes it super simple to do! Which also makes sliders, a favorite of my grandkids.

Feel free to add your favorite traditional (burger) toppings, my favorites are avocado, lettuce & a touch of vegan mayonnaise. I also love my beet burger on top of a gluten-free hamburger bun.

     Vegan Beet Burger

     ( Servings 6 )

Preparation: 15 minutes

Cooking: 20 minutes

Ready in: 35 minutes

Ingredients:

  • 1 tbsp grapeseed oil
  • 2 cloves of garlic, minced
  • 1 large raw beet, peeled and diced into tiny cubes
  • 2 raw carrots shredded (about 1 cup)
  • 1 ½ cups black beans (cooked, drained and rinsed)
  • ¾ cup cooked rice (any kind will do)
  • ¾ cup raw walnuts, chopped
  • 1/2 cup fresh parsley
  • 1 tsp smoked paprika
  • 1 ½ tsp cumin powder
  • 1 tsp black pepper
  • 1 tsp sea salt + more to taste

Directions:

  1. Preheat grill to 350°.
  2. In a skillet add oil and heat over medium heat. Saute garlic in it about 30 seconds. Stir in diced beets and carrots. Reduce heat and cook for 15 minutes, stir in between.
  3. Add beans and rice. Then add walnuts, parsley, paprika, cumin, black pepper, and salt.
  4. Mix thoroughly and remove from heat.
  5. Blend all the mixture in a food processor.
  6. Season with more salt and pepper to taste.
  7. Make tightly packed burger patties and transfer to a prepared baking tray.
  8. Grill for 20 minutes and flip in between.
  9. Serve with favorite toppings.
