I am always looking for an easy gluten-free recipe. And spaghetti squash is an excellent alternative to the traditional gluten-free kinds of pasta out there. I not only love the texture, but the spaghetti squash also has a mild flavor, which makes it one of my favorite dishes to add numerous toppings too.
I love making my homemade spaghetti sauce, which I occasionally add other ingredients. Pasta sauces are so easy to adjust, no need for bland meals for your family.
Here are just a few ideas:
- Spinach
- Mushrooms
- Onions
- Olives
- Meatballs or Meat Sauce (Beef or Turkey)
- Shrimp
- Zucchini
- Carrots
- Fresh Tomatoes
- Basil
- Peppers
- Broccoli
- Cheese – Cheddar, Mozarella, Parmesan, Ricotta
Cooking your spaghetti squash:
You can cook spaghetti squash in the oven or an instant pot. Either way, it is relatively easy to do. Here is the recipe using your range.
- Cut your squash lengthwise in half.
- Scoop out the seeds.
- Place your squash, skin down on a baking sheet and drizzle with olive oil.
- Flip the squash over and gently poke the skin with a fork.
- Cook your squash cut side down.
- Place in a preheated oven at 400°F for 30-40 minutes, cooking it less will create an al dente spaghetti.
- After your squash is cooked, let it cool somewhat before taking a fork to scrape out your spaghetti.
Red Sauce Ingredients:
- 1 Can (14.5 oz.) Italian roasted diced tomatoes
- 1 Can (15 oz) tomato sauce
- 1 Can (6 oz) tomato paste
- 2 tsp dried Italian seasoning
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
Mix all ingredients in a stovetop pot and stir. Simmer the sauce and serve hot over spaghetti squash. Don't forget to add veggies, meat, or cheese to your dish for additional flavor!

- Dash Extra Virgin olive oil
Red Sauce
