Gluten-Free Double Chocolate Muffins

Gluten-Free Double Chocolate Muffins

Equipment

  • Muffin Pan

Ingredients

  • 2 Flax Eggs To make 1 flax egg – 1 tbsp. ground flax & 2 1/2 tbsp water. Mix together & let sit for 5 minutes.
  • 2 Cups Organic Almond Butter
  • 1 15 Oz Can of Pumpkin Puree
  • 1/2 Cup Pure Maple Syrup
  • 6 Tbsp Organic Cacao Powder
  • 2 Tsp Pure Vanilla Extract
  • 2 Tsp Baking Soda
  • 1/2 Cup Dark Chocolate Chips for Baking I prefer HU Baking Dark Chocolate

Add Ins:

  • 1/2 Cup Nuts (Almonds, Pecan, Walnuts, etc.)

Instructions

  • Line muffin tin with parchment paper liners
  • Combine all ingredients until well blended
  • Lightly fold in chocolate chips and optional nuts
  • Fill muffin tins 3/4 full (don't overfill)
  • Bake at 350° for approximately 25 minutes (or until toothpick comes out clean when inserted)
