Gluten-Free Double Chocolate Muffins
Delicously moist gluten-free , egg-free, dairy-free, flourless, grain-free double chocolate muffins.
Servings: 12 Muffins
Equipment
- Muffin Pan
Ingredients
- 2 Flax Eggs To make 1 flax egg – 1 tbsp. ground flax & 2 1/2 tbsp water. Mix together & let sit for 5 minutes.
- 2 Cups Organic Almond Butter
- 1 15 Oz Can of Pumpkin Puree
- 1/2 Cup Pure Maple Syrup
- 6 Tbsp Organic Cacao Powder
- 2 Tsp Pure Vanilla Extract
- 2 Tsp Baking Soda
- 1/2 Cup Dark Chocolate Chips for Baking I prefer HU Baking Dark Chocolate
Add Ins:
- 1/2 Cup Nuts (Almonds, Pecan, Walnuts, etc.)
Instructions
- Line muffin tin with parchment paper liners
- Combine all ingredients until well blended
- Lightly fold in chocolate chips and optional nuts
- Fill muffin tins 3/4 full (don't overfill)
- Bake at 350° for approximately 25 minutes (or until toothpick comes out clean when inserted)
