Gluten-Free Peanut Butter Bark

I love peanut butter, but peanuts are from the legume family and therefore are inflammatory to some people! In saying that, you can easily alter the peanut butter to use other nut butter. If you love almond butter or cashew butter, by all means, use that instead! 

5 Simple Ingredients

You can also add or disclude the ingredients to suit your tastebuds. Heck, every time you make it, you can try adding different ingredients. 

Here are a few ideas:

  • Dried Cranberries
  • Raisins
  • Dried Berries
  • Coconut
  • Walnuts
  • Pecans
  • Toasted Pine Nuts
  • Pumpkin Seeds
  • Sunflower Seeds
  • Almonds
Spread the mixture onto a baking sheet.

Try mixing in some flax seeds or chia seeds to add some fiber and omega 3. You can also double the batch to share with the family – ok, maybe!?

Recipe for Gluten-Free Peanut Butter Bark

Perfect snack for the kids!
  • 1/4 C Peanut Butter 
  • 1/4 C Butter
  • 1 Tbsp. Honey 
  • 1/4 Cup Chocolate Chips (I use dairy-free)
  • 1/4 Peanuts 

Directions:

  1. First, melt butter in the microwave for about 30 seconds, or use softened butter you set out previously. 
  2. Add in peanut butter and mix well. 
  3. Add in additional ingredients.
  4. Spread the mixture and flatten onto a cookie sheet with parchment paper. 
  5. Freeze for 45 minutes or so.
  6. When done, remove from the freezer and break into pieces.
  7. ENJOY!  
  8. Store your (leftover) bark in the freezer or the refrigerator in an airtight container.
